One of its signature dishes, Sogalbi Jjim (braised beef ribs), uses plenty of natural ingredients such as various fruits, fresh vegetables, kelp, homegrown shiitake mushrooms, and honey, resulting in tender and savory flavors. After finishing the ribs, you can mix the remaining sauce with bean sprouts or stir-fry rice with it. The spiciness level can be adjusted: soy sauce flavor, mild spicy, spicy, and very spicy. Another signature dish, Makguksu (buckwheat noodles), follows the traditional method passed down for three generations in Gangneung, with noodles hand-kneaded and directly extruded by machine. The broth is made with plenty of vegetables, fruits, seafood, and mushrooms, giving it a refreshing and clean taste. Wang Galbi Tang (king beef rib soup) is a traditional flavor made by simmering carefully selected beef leg bones in an earthen pot over oak firewood, adding various fresh natural ingredients and brewing overnight. In particular, the ribs used in the soup are pre-seasoned and aged, then boiled with the restaurant's secret ingredients, resulting in no gamey smell and a tender, clean taste.
