Borigotgan uses traditional doenjang (soybean paste), ganjang (soy sauce), and cheonggukjang (fermented soybean paste) made with care from beans directly farmed in the Pihwag-i Village of Danyang at an elevation of 700 meters. It prepares a healthy table with various wild greens such as bracken, Korean mountain garlic, angelica tree shoots, prickly ash shoots, butterbur, and other seasonal ingredients grown by local farmers. The signature menu of Borigotgan is the special 'Gotgan Table' set, which includes sanchae boribap (mountain vegetable barley rice), cheonggukjang, and stir-fried pork. Also popular is the sanchae boribap, which comes with six types of seasonal vegetables grown on the farm, barley rice, and doenjang jjigae (soybean paste stew).
